However, research shows that there are key critical nutrients that can be lacking or found in suboptimal amounts in certain vegan and vegetarian diets to meet the required nutritional needs of certain individuals. The good news is that with proper meal planning, all nutritional needs can easily be met even by those following strict vegan or total vegetarian diets. Nutrients like iron, calcium, vitamin B-12, zinc, and omega-3 fatty acids are critical for a healthy diet. Dr. Winston Craig discusses the benefits of a healthy vegetarian diet and these critical nutrients for human health. Dr. Craig has served as professor of nutrition for both Andrews and Loma Linda Universities. He is a former chair of the Department of Nutrition and Wellness at Andrews University. Dr. Craig has authored over 300 scientific articles for health publications, and is the editor for the landmark scientific book for health professionals, Vegetarian Nutrition and Wellness, published by CRC Press.
